I survived on gluten free macaroni and cheese while in Ireland. It somehow became our go-to meal and also turned into the dinner we made after a long day hiking in the mountains.

Gluten free macaroni and cheese is the perfect comfort food. For this recipe, you will need gluten free noodles. I like to use rotini, but you can use the traditional macaroni. Gluten free pasta is made with corn and/or rice. It has the same taste and texture as regular pasta, just without the gluten. This recipe is gluten allergy friendly. In a large mixing bowl, whisk corn starch into milk until smooth. Stir milk into butter mixture and whisk until well-blended. Stirring constantly, cook over medium heat until thickened (about 5 minutes or so) and remove from heat. Stir three cups of shredded cheese into sauce until melted; reserve one cup of cheese for topping.
We had made a conscious decision to stay in places with full kitchens while on holiday. That way, we didn’t have to deal with eating out all the time and worry about what to eat for every meal.

It also fueled me with badly needed calories (since I had not eaten the entire day). // Extreme poor planning and didn’t make that mistake again.

Best Tips for this Gluten Free Macaroni and Cheese
- Don’t forget to thoroughly rinse pasta after cooking to keep it from over-cooking AND to remove the excess starch. That’s the best way to prepare gluten-free pasta.
- For those needing vegetarian (because really I do understand), simply omit the prosciutto from this recipe, it’ll still be amazing.

Gluten Free Macaroni and Cheese Recipe
Gluten-free, Dairy free

Ingredients:
- 4 cups gluten-free penne pasta, cooked (or favorite pasta of choice)
- 1 cup whole milk (can use dairy-free milk if needed)
- 3 Tablespoons butter (or dairy-free butter substitute)
- 1 1/2 cup sharp cheddar cheese, shredded (or dairy-free cheese substitute)
- 1/2 cup shredded parmesan cheese
- 5-6 prosciutto slices, roughly chopped
- Freshly ground black pepper to taste
Directions:
- 1. In a large saucepan over medium heat add cooked pasta, milk, butter and cheese.
- 2. Stir until butter and cheese are fully melted. (Apprx 5 minutes)
- 3. Mix in prosciutto, leave on low heat for another 2-3 minutes.
- 4. Crush freshly black pepper, and serve immediately.
